NON-COLOURED MALT WHISKIES

NON-CHILL-FILTERED / NON-COLOURED MALT WHISKIES ARE FRESH WHISKIES MAINLY FOUND STRAIGHT FROM THE CASK WITHOUT ANY MODERN PROCESSING. SOME ARE WATERED DOWN TO 46% WITH WATER FROM CASK STRENGTH.

THESE ARE IN THE MAIN "INDEPENDENTLY BOTTLED" AND ARE NOT PART OF THE MAIN STREAM WORLD MARKET WHISKIES, WHERE BRANDED NAMES HAVE TO BE MODIFIED TO MAKE THEM INTO A STANDARDISED PRODUCT, HARMONISED TO THE TASTE AND STANDARD ACHIEVED BY PREVIOUS MULTIPLE CASK BOTTLINGS. HOWEVER, WHEN DISTILLERS RELEASE WHISKIES AT 46% ALC/VOL AND ABOVE AT CASK STRENGTH THESE ARE GENERALLY NOT CHILL-FILTERED, BUT THESE ARE A RARITY.

CHILL-FILTERING ENABLES A VERY CLEAR WHISKY. (WHEN WHISKY IS REDUCED WITH WATER BELOW 46% ALC/VOL). YOUNGER DRAMS ARE PARTICULARLY VULNERABLE TO BECOMING CLOUDY WITH SOLIDIFYING OILS, ESTERS AND THE OTHER MOLECULAR AGENTS IN WHISKY MAKING SOLIDS. THIS NORMALLY HAPPENS WHEN THE DRAM IS COLD OR ICE AND SOMETIMES WATER IS ADDED.

THERE IS ALSO A DOWNSIDE OF CHILL-FILTERING BEYOND SMOOTHNESS THROUGH OILS BEING REMOVED, WHERE A CONSIDERABLE AMOUNT OF HIGH END OR LONG TAIL ESTERS AND SOME SMALL MOLECULE'D ESTERS ARE SWEPT AWAY IN 3 MICRON FILTER PAPERS. THIS FLATTENS OUT THE TASTE SPECTRUM OF THE DRAM ON BOTH ENDS RESULTING IN WHISKY THAT IS DEPLETED FROM IT'S NATURAL FORM WHERE IMPACT AND FLAVOUR IS LOST ACCORDING TO THE CHILFILTERING TEMPERATURE AND SIZE OF FILTER MESH. IN THIS IT MAY BE ARGUED THAT CHILFILTERING WILL ENABLE THE BLENDER TO AN EASIER RESULT FOR A HARMONISED PRODUCT BUT AT THE COST OF LOOSING SMOOTHNESS AND FLAVOUR.

AT WHISKY CASTLE FOR THE MOST PART WE BELIEVE IN WHISKIES THAT ARE VERY NATURAL AND ARE NOT CHILFILTERED OR COLOURISED WITH DISTILLERS CARAMEL TOWARDS ENABLING A HARMONISED PRODUCT. WHISKIES WHICH ARE NATURAL AND ARE TRUE TO THE CASK THEY HAVE BEEN MATURED IN, WHERE, WHEN WELL SELECTED PROVIDE THE VERY BEST OF WHAT SCOTTISH MALTS CAN BE. YOU CAN ALWAYS WATER THEM DONE TO YOUR TASTE YOURSELF.
